Ingredients

1-2 cups cucumber diced
20 cherry tomatoes
2 tbsp olive oil
2 tbsp white wine vinegar
1 pinch salt
1 pinch ground black pepper

Instructions

Cut the cherry tomatoes into halves or quarters, as you like.
Mix in the rest of the ingredients, ensuring they are all well combined.

Cucumbers & tomatoes grown in the backyard are not only easy to do but they’re super foods and awesome combined in a salad!

This low calorie vegan recipe is very simple but the tomato juices mixing with the cucumber, olive oil, and vinegar creates a great taste. An ideal accompaniment to hot or cold meats or a refreshing snack on its own.

Works and tastes best if cucumbers and tomatoes are sourced fresh from the garden on the day.
