Ingredients
  

  • 1-2 cups cucumber diced
  • 20 cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 pinch salt
  • 1 pinch ground black pepper

Instructions
 

  • Cut the cherry tomatoes into halves or quarters, as you like.
  • Mix in the rest of the ingredients, ensuring they are all well combined.

This low calorie vegan recipe is very simple but the tomato juices mixing with the cucumber, olive oil, and vinegar creates a great taste. An ideal accompaniment to hot or cold meats or a refreshing snack on its own.
Works and tastes best if cucumbers and tomatoes are sourced fresh from the garden on the day.
