Double Pumpkin Pudding

This double pumpkin pudding is easy, yummy & uses leftovers- it's a triple win!

Equipment

  • Food processor (fitted with the S blade)
  • Spoon
  • bowl

Ingredients
  

  • 1 cup roasted pumpkin, packed firmly
  • 1 ripe banana
  • 1 pinch salt
  • maple syrup to taste (I used 1 tbsp)
  • 2 tbsp cacao powder

Instructions
 

  • Put all the ingredients except the cacao powder into the food processor and 'woosh' everything into a nice and finely blended pudding
  • Taste to see if this is to your liking. If you want it sweeter, add more maple syrup
  • Scoop half the pudding into a separate bowl. Add the cacao powder to the remaining pudding and blend until combined
  • Scoop out the cacao flavoured pudding into the bowl and you are already done.
