A soft spiced loaf with the taste of cinnamon donuts; perfect with tea & coffee!

The moist texture of banana bread with the taste of cinnamon donuts makes this cinnamon donut loaf a winner for the whole family!

The first word that comes to mind when I think of our cinnamon donut loaf is moreish. It disappeared so quickly when I first made it, that I made another the following day! Dense, moist and delicious, cinnamon donut loaf is perfect when you want something sweet but not sickly. Ideal in lunchboxes, or for morning teas or desserts alike (serve with freshly whipped cream), cinnamon donut loaf is easy enough to make that you can whip it up on a weeknight. Here’s How to Make It

Preheat oven to 175C (350F). Line a loaf tin with baking paper. In a large mixing bowl, mix all the dry ingredients together- flour, sugar, cinnamon, baking powder and salt. In another bowl, beat all the wet ingredients together until completely blended- eggs, milk, melted butter, vanilla.

Pour the wet ingredients into the dry ingredients and stir until *just* combined. Do not over-mix. Pour the batter into the loaf tin. Bake in the oven for 50-60 minutes, or until a skewer comes out clean.

Let the loaf cool in the pan for 10 minutes before removing it to a large piece of baking paper. Melt the extra butter.

While the loaf is still warm, brush the entire surface with the melted butter. Include the sides.

In a small bowl, mix together the cinnamon, nutmeg and sugar. Sprinkle this mixture over the loaf.

Ingredients
  

  • 2 cups plain flour
  • 1.5 cups caster sugar
  • 1 tsp cinnamon (ground powder)

  • 25 grams unsalted butter, melted
  • 1 tbsp vanilla extract
  • 1/2 tsp almond extract optional

Topping

  • 1/4 cup caster sugar firmly packed
  • 50 grams unsalted butter, melted
  • 1 tsp cinnamon (ground powder)
  • 1/2 tsp nutmeg (ground powder)
